Maca-Almond Butter No Bake Bars

Ingredients:

  1. 1 cup of butter (I use dairy free)

  2. 2 cups oats (ground lightly)

  3. 1 teaspoon maca powder

  4. 1 and 1/4 cup of Almond Butter (or nut butter of your choosing. I’ve used sunflower butter & it’s delicious too!)

  5. 2 tablespoons of maple syrup

  6. 1 1/2 cups of dark chocolate chips

  7. 1 teaspoon of vanilla extract

Directions:

  1. Ground the oats in a blender or with an immersion blender

  2. Mix the oats, nut butter, maple syrup, maca powder & vanilla extract together. It should be thick, so adjust as needed

  3. Line a loaf pan with parchment paper, & mash the nut butter mixture on top

  4. Melt the chocolate! Either in a double boiler or in 30 second intervals in the microwave, stirring in between.

  5. Pour chocolate evenly over top of nut butter mixture

  6. Place in the fridge for 30 minutes to an hour, or until set

  7. Slice and enjoy!
