Make It Your Own Veggie Pasta

Ingredients:

*are subject to change based on your heart’s desire & your fridge’s contents* 😉

  1. Head of cauliflower

  2. A couple bell peppers - any flavor is good! 

  3. A sweet potato or 2

  4. Head(s) of garlic to taste 

  5. onion/shallot 

  6. Milk of choice (I prefer coconut or almond is fine too. Just make sure it’s unsweetened/unflavored)

  7. Nutritional yeast

  8. Chickpeas for some protein 

  9. Vegan cheese if desired

  10. Mushrooms 

  11. Veggie broth

  12. Noodle of choice (obsessed with red lentil noodles lately)

  13. Lemon juice

Directions

  1. Preheat oven to 400°

  2. Chop veggies up 

  3. Mix veggies  with olive oil & desired seasonings

    1. I usually do garlic, ginger, oregano, paprika, chili powder, celery salt, black pepper

  4. Roast them in the oven until they’re a little singed

  5. Boil some water

  6. Throw in your noodles

  7. Toss veggies all in the blender (MINUS the mushrooms) with nutritional yeast, broth, lemon juice & a little cheese (vegan or not, up to you)

  8. Once the noodles are nice and tender, rinse them 

  9. Toss the noodles, sauce, and mushrooms back in the pan to make sure the sauce is still nice and warm

  10. Serve!
